Description:
Risotto with spinach can be eaten as a main meal. It is light and it is full of vitamins. Serve your meal with a slice of bread and some olives. If you do not have fresh spinach, you can use the frozen one from the super market.
Directions
. In a deep pan of boiling water add the spinach for one minute and remove to a large bowl with water and ice. In a saucepan over medium heat add olive oil, add onions and fry for three minutes until softened. Add the rice and the bay leaf and stir. Pour the wine and stir for 1 minute to evaporate. Add 1/4 cup of the broth and spinach, stirring continuously. Continue for about 10 minutes and drop the chopped dill. After 8 minutes the rice is ready. Add one tablespoon broth. Remove the risotto from the heat. Remove the onion and bay leaf and add the butter, lemon juice, cheese, salt and pepper. Serve while hot and put one tablespoon of yoghurt on top.
Ingredients
1 ½ cups. Arborio rice, 300 gr. fresh spinach, 1 medium onion cut in half, 4 tablespoons yogurt, 4 tablespoons dill, 1/2 cup. grated parmesan cheese, 1 bay leaf 1/2 cup. dry white wine, Juice of two lemons, 7 cups hot chicken broth, 3 tablespoons butter, Salt and pepper
