Serve these delicious and hearty muffins for breakfast or eat them during the day as a snack. It is, also, the perfect snack for the kids.
Preheat oven to 250c.
In a large bowl, cream together the butter, sugar, honey, eggs and salt.
Then, add the flour, cornmeal and baking powder and blend thoroughly. Add milk while mixing.
Add corn in to mixture and combine by hand until corn is worked in.
Grease a 12-cup muffin pan and fill each cup with the batter. Bake for 20-25 minutes or until muffins begin to turn brown on top.
